Dinner - Italian baked eggs. (served with sourdough and a romaine/spinach salad.)
I absolutely loved this dish! It’s made with crushed tomatoes, cannellini beans, aubergine, red onion, garlic, oregano, paprika, sundried tomato pesto, fresh basil and eggs. It’s essentially an Italian take on huevos ranchero and it’s, as you say down here, gurt lush. My Ma and brother thought so too! :)
I think I’ll post a recipe for this once I’ve made it a few more times!

“You’re not fat. You have fat.”
I got a lot of messages like that when I called myself fat in a selfie I posted a few days ago. I appreciate the intention, but try as I might I can’t bring myself to care about the message simply because I don’t get it. What’s so wrong with using the adjective fat? Is it so bad that we have to skirt around the truth and structure sentences so we can distance ourselves from it as much as we can?
Fat is just a word. It’s an adjective and a noun. We all have fat but not all of us are fat, which is why saying I have fat is not the same as saying I am fat. I understand that the whole ‘you have fat’ idea is trying to achieve something positive, but I think it’s also contributing to our fixation on the word fat and reinforcing the negativity we have come to associate with it. Fat is not an insult, but in the end it’s up to you if you’ll take it as one. But here’s what I suggest: If you’re fat, be comfortable with saying you’re fat because I bet Dany’s dragons that it’s not the only thing you are. You’re smart, funny, talented, brave, thoughtful, kind, loyal, and a dozen other things that having a fat body won’t change.
P.S. Anyone who thinks fat=ugly clearly hasn’t seen Rebel Wilson in leather.
01 May 2013 - Hello All.
I’ve decided to keep you guys updated on what’s going on in my life at least once or twice a week. I want you guys to get to know me better on a personal level and what better way than sharing my journey in life? This will consist on my fit lifestyle and also my personal one. S here it goes..
Yesterday I was at the Doctors for a checkup after having my Gallbladder removed. My doctor recommended I take it easy for nearly two whole months, which means no normal exercising for me. It was tough at first, I was so hyper and walked around everywhere, I couldn’t keep still because I had all this energy I couldn’t use on my exercise so I kept busy other ways, always went out, always did something, I just couldn’t relax.
So the Doctor explained to me yesterday I could go back to normality but not to rush straight back in, ease myself into it. As I didn’t do exercise in over a month, I couldn’t agree more as I didn’t want to put my body in shock with intense exercise. Today I did a 12 minute workout consisting of H.I.I.T and I think I’ll keep doing short exercises until I feel ready to do more. I’m already dead after only 12 minutes which is surreal because 2 months ago I could do a full hour.
My boyfriend has been completely supportive throughout the whole thing and has helped me not be so nervous about not exercising. He’s going to start working out with me also, which will be great, because right now I feel I need someone motivating me a little because once you sit doing nothing for so long, you start becoming lazy.
So, I’ll keep ye guys more updated as I progress to try and get fitter and stronger again.
