Delicious dinner: foil baked fish with lemon and parsley, beans and carrots with crayfish & broccoli with orange.
Healthy Wednesday recipe:
For the fish
Pre-heat oven at 180C (heated air oven)
Combine lemon juice with garlic and parsley
Place fish (I used pangasius) on foil, season, spread with herb mixture and fold foil over so that it wraps the fish.
Bake in preheated oven for 12 minutes
For the broccoli
Cook broccoli until just tender
Tip into hot pan to sear out water for about a minute
Reduce heat, add sliced orange and warm through for 3 minutes or so
For the beans, carrots and crayfish
Cook beans and carrots until tender
Fry a finely chopped onion until it’s softened
Add beans and carrots
Add crayfish just before serving so it can heat through, but doesn’t go rubbery
