Quinoa Protein Cookies with Rhubarb Sauce
A vegan, gluten-free dessert for a little “spring detox”.

Ingredients (for 10 small cookies):
- 1 cup cooked quinoa
- 1/2 cup cashews soaked in water overnight
- 3 tbsp vanilla flavored pea protein
- 2 tbsp coconut flour
- 1/4 cup almond milk

Instructions: Mix everything in a food processor. Use a cookie cutter to cut out the cookies and bake for 25 min at 230 degrees Celsius.

Ingredients for the pink rhubarb sauce:
- 6-8 rhubarb sticks
- one pink grapefruit

Instructions: Steam the rhubarb sticks, mix in the flesh of the grapefruit, puree using a handheld blender.

I love Taco Bell, like mid day craving love it. Their Crunchwrap Supreme (second pic) is my all time favorite, but with 560 calories, 24g of fat, and over 1400mg sodium, it is just NOT on my good food list. 

THEN! I came across this! (the first pic). It is a Crunchwrap with only 210 calories, less than 5g of fat, and 25g or protein! Needless to say, I will be trying this!

Here’s How!

Ingredients: 
1 La Tortilla Factory Whole Wheat Low-Carb/Low-Fat Tortilla; Large**
3 baked corn tortilla chips (like Guiltless Gourmet’s Yellow Corn Tortilla Chips) 
1/3 cup frozen ground-beef-style soy crumbles (like Boca Ground Burger orMorningstar Farms Meal Starters Grillers Recipe Crumbles)
1/4 cup shredded fat-free cheddar cheese 
1/4 cup shredded lettuce 
1/3 tomato, diced 
1 tbsp. fat-free sour cream 
1/2 tsp. taco seasoning 

Directions: 
Combine frozen soy crumbles, cheese and taco seasoning in a small microwave-safe bowl. Heat in microwave for 30 seconds. Warm tortilla for a few seconds in the microwave (making it easier to fold without ripping), and then lay it out on a flat surface. Place the soy crumble mixture in the center of the tortilla. Flatten the mixture into a circle, keeping it about 2 inches from the edge of the tortilla. Next, layer the tortilla chips on top of the soy crumble mixture. Evenly top with sour cream, lettuce and then tomato.

FOLDING INSTRUCTIONS: Starting at the bottom of the tortilla, fold edge up to the center of the tortilla. Then going around the edge of the tortilla, repeatedly fold overlapping sections to meet the center, for a total of about 6 folds (until filling is completely enclosed). In a pan sprayed with nonstick spray, over medium heat, carefully place the folded tortilla in the center of the pan (folded side down). Heat for 3 - 4 minutes. Carefully flip the wrap with a spatula and heat for another 30 seconds. Enjoy! MAKES 1 SERVING

The World’s Healthiest Cookie
This dough takes two minutes to whip up, so in under 10 minutes, you can be scarfing down delicious coconut flour cookies. And really, check out these stats!
Nutritional Info
*Update: There has been some question about the nutritional info, and for clarification, these having only 6 calories each is based upon a bite-sized cookie. If you only make 8 cookies out of this recipe to make them more traditional sized, they will have about 15 calories each. Still a calorie bargain, if you ask me!
Per bite based on 16 bites
Calories: 6 (about 8 or 9 with chocolate chips)
Fat: <0.5 grams
Ingredients
2 Tablespoon coconut flour
2 Tablespoon mashed banana or applesauce (I prefer banana. Personally, I think applesauce gives them too much of an apple-y taste. That’s just me.)
pinch salt
stevia or other sweetener, to taste
1/8 teaspoon baking powder
3 Tablespoon almond milk, or milk of choice
chocolate chips
Directions
Preheat oven to 350F.
In a small bowl, mix coconut flour, baking powder, and salt. 
Add in masked banana or applesauce and stir. 
Add in almond milk, one tablespoon at a time until fully incorporated. 
Stir in chocolate chips. 
Drop dough by tablespoon or teaspoon, depending on how big you want them, on a parchment lined baking sheet. (I used a silicone mat.)
Flatten the dough into cookie shapes.
Bake in the oven at 350F for 10 minutes. 
Let cool before scarfing them all down.
By the way, you are allowed to eat the entire batch! ;)

Watermelon Tart! (tutorial)

Look at it closely! It looks like some kind of cake or tart right? but it’s not. It’s actually a watermelon cut into the shape of a cake with yogurt, strawberries, blueberries and nuts on top!
